Mid range EU supermarket steak. Limousine beef. Charolais would be better but this stuff is real affordable and already really nice n tender.
There was a big pocket of fat in the middle (as visible in the picture) but it cooked soft and nice so I just ate it.

Home made. I soaked them in sugar water for an hour first, then blanched in 120C for 5min, then finished in 180C. Perfectly crunchy and soft inside.

Why would you use both? What kind of "grill" are you talking about? The kind that leaves black marks? Why are you cooking that all the way to medium rare and then overcooking it even more in a skillet? The grill would be all you need. Not both.
