I’m making a wedge salad, an apple pie, dinner rolls, and maybe a special dessert. I’m making the pie crust and salad dressing today, and doing a practice run for rolls and dessert.

In shifts. The stuffing, save the egg to hold its shape, will be cooked tonight along with the stock for the gravy, the cabbage leaves and the bisque.
The sweet potatoes will be roasted and passed through the chinois tomorrow then the jello will be made Wednesday and the sweet potatoes will be whipped with cream then as well.
Thursday, all that will need doing is making the cranberry sauces and gravies, cooking the sprouts, layering the trifle, stuffing and steaming the cabbage and seasoning-and-roasting the turkey. Also reheating things that need reheating.
The apple pie is shopbought because I caught it on a ridiculously good deal. The corn is, too. After trying some of that brand last week, I decided to forgo my usual baby corn for this nuke-and-eat stuff that comes in its own butter.

I plan on brining the turkey, I cook for my family on the Friday after Thanksgiving. There should be about ten adults and three kids (one an infant)
Sadly the cold snap slowed down my defrosting, I was keeping a 20 pound bird in an outside fridge on Friday but effectively it's only been thawing since I took it out and moved it inside Sunday.
I'll probably use a bucket of water to let it thaw in before setting it to brine Thursday morning

High heat to start, lower the heat over time
Coat some foil with oil or butter and tent the breast and uncover it at the last 45 minutes to brown, it will keep it moist
If you're going to dry brine, get it salted at least 24 hours before baking, better would be today or tomorrow

Usually turkeys are so large they're going to brown up no matter what. If anything you'll usually have to tent it with some foil to keep it from cooking too heavily. Atleast that's my experience with a gas stove.

A word of advice, don't waste good compound butter on the skin. It's just going to run off
You can actually spread it under the skin and coat the entire breast assuring flavor that sticks around. Just work your fingers under it starting from the neck and it'll separate easy.

Brit who moved to US here. It's my first Thanks Giving where I'm cooking, thankfully its just me and the wife.

Turkey got me nervous, I brought it too late so I'm currently defrosting it in water, changing it out every 30 mins. I plan to brine it tonight until before bed tomorrow, then pat it dry and let it dry out further in the fridge.

Before sticking in the oven I'll inject herby butter into it and massage butter under the skin and all over it.

Planning to bake it on a rack.

Any tips on the turkey?

Everyone makes a dry turkey once in a while so don’t be discouraged if it comes out badly. I’ve had spatchcock turkeys the last few years and while it’s basically idiotproof and comes out nice, you lose a lot in the presentation. It sounds like you are on the right track as far as brining. Make the biggest batch of gravy you can possibly make.
Don’t forget the mashed potatoes. The thanksgiving recipe is half as much butter as potatoes, by weight. Plus a splash of milk.

Not him but I just deboned a 15 pound turkey for the first time ever. It took a ridiculously long time, like over an hour, in part because it was still a little frozen inside despite being in the fridge for 4 days but also just because of the mess of dealing with raw poultry. But I got the wings, leg quarters and breasts done pretty satisfactory in my opinion especially for a first time ever doing it, got them on the racked cookie sheet salted to dry brine until Thursday. I will be attempting to cook a 3lb turkey breast in my toaster oven. My family moved across the country so I am alone. Others times when im alone I just cook a chicken thigh and maybe make mashed potato and gravy or stuffing. But I wanted turkey this time and ive never had to cook something this big for this long. I usually didnt set up holiday decorations either because i never have guests but I got a nice plastic christmas tree that I set up and cleaned my messy apartment.

Got my dad a Boos Block(tm) last year for Christmas. Motherfucker uses it as a stand for his French press, jar of coffee beans, and the Smeg toaster (the last of which was a gift from my sister to my mom). Love him to death but it pisses me off that I bought such a nice gift for someone that loves to cook and he won't fucking use it... Even conditioned and oiled it myself and all that shit.

This year I am going to get him a cookbook and tell him to pick something out for us to make together. So, I need a cookbook full of meals with big cuts of meat that will benefit from the use of a Boos Block, so I can show his goofy ass to use it for once.

Turkey (Only had 7 lb birds and 20+ pound birds so I've got a monster dry brining in the fridge). Spatchcocked, putting lemon herb butter underneath the skin right before putting it in the oven.

Home made rolls
Garlic Taters
Corn and green beans.
Starting the stock at 4 AM tomorrow and will use for the stuffing and gravy.
Scared about the turkey coming out on time tbdesu. Spatchcocked it and usually takes about 2.5 hours for a 16 pound turkey. Might have to put it in a bit early to avoid the gamble.
Pretzels and cheeses to keep the folks happy while it's all cooking.
Pumpkin pie and chocolate mousse for dessert.
This is a forgiveness Thanksgiving considering everyone ditched last minute last year and I ended up having a whole spread to myself.
Thinking I might make turkey chili with the leftovers this year. Gotta find a good recipe for that. Pleb as it may be, the kind from Panera bread always hits the spot when I'm being lazy during Christmas shopping.

Every time at thanksgiving I’m reminded of how slowly I cook. I’m so fucking tired of seeing recipes saying the length of time something takes, and then it takes me twice or even three times as long. Tonight I made stuffing and didn’t even cook it, I will be baking it tomorrow. Someone in the house toasted the bread and made the homemade turkey stock (I was the one who broke down the turkey though) which was still simmering when I got home. So I had to let the stock finish and strain it, then chop the celery, onion, rosemary, pick off the rosemary and thyme leaves, brown the sausage and remove it, soften the onions and celery, slice and add garlic and herbs, add all that shit to the bread, add eggs, add stock, fold it all together, put it in the buttered 13x9 pan. I didn’t even cook the fucking thing yet and it took me something like 2-2.5 hours to do what I just listed. I’m so tired of being retarded

Ive been brining a 20lb turkey in salt, brown sugar, hard herbs, orange peel and garlic for about 20 hours. after starting the brine, I prepped a bacon and white cheddar mac and cheese (sauce from ingredients), and bacon jalapeño baked beans. I will be making glazed carrots, turkey gravy, and bringing sneeds hawaiian rolls. others are bringing green bean casserole, pumpkin pie, deviled eggs, pasta salad, cranberry sloppa, mashed potatoes and bread dressing. ill be having some irish coffees along the way

anyone have experience with blood sausage? guessing not, but i fell in love with it a couple years ago and so i now make it every year as my dish to bring. sadly yesterday the fucking chinese supermarket i go to didn't have any pork shoulder (preferred meat cut for the dish), all other meat cuts had bone in it, i don't have a butcher's knife to deal with them, so i just got some pork belly. i hope that will be an OK substitute? it's just not as fatty as i'd like, you don't generally use lean cuts of meat.

Thanksgiving is a gift you can give yourself. I'd do a chicken, gravy, some potato mash, and stew some finely chopped carrot, onion, and celery in butter on low heat for about 20 min.

A really nice chicken recipe I've found is:

Friday I got a 15 pound frozen turkey at 35 cents/pound.

Tuesday I broke it down (first time I’ve ever broken down a bird) because I was doing the “cook legs wing and breasts individually rather than the entire thing” method.

Wednesday I used the spine neck and carcass scraps to make a bunch of stock. I also handmade stuffing. Cubing and toasting the sourdough loaf, chopping and sautéing onion and celery with the herbs, sautéing sausage, egg, stock, assembled it to cook today

Then this morning I made the gravy. I also made the green bean casserole with blanching the beans, making the onion and mushroom sauce, assembling it. Then I also made the Brussels sprouts… roasting them in the oven, then in the pan sautéing the bacon, onions, garlic, combining with the Brussels. My mom made the mashed potatoes.

It was so much god damned work, but spreading it out over three days made it somewhat easy. Since I don’t cook much, everything took me probably 2-3 times longer than it would take normal people, but still, I can’t imagine how horrible trying to make this all on just Thanksgiving, or even Wednesday too

Seriously man. Frozen turkeys are in the 30s cents per pound. My 15 pound frozen store brand one cost $5.75 and it tasted fine to me. Not sure how much better a butterball or fancy organic one would taste.

I’m not sure if turkeys are this price all year or just thanksgiving loss leaders. I didn’t have a dish specifically expensive like Mac and cheese would be but yeah… the loaf of bread for stuffing, the Brussels sprouts, the green beans, both of which were only $2 a pound, the package of bacon for $4… added together my entire Turkey was cheaper than all this. my turkey came out kind of shit sadly. no browning or crispyness on the skin at all. I think it cooked too fast for the skin to dry out, even though I tried to dry it with paper towels before I put it in. maybe next year I will try blow torching it.

I don't go completely nutso like you do but we grab a few of them every year but we only roast one. I break down the others and refreeze them in parts or, in the case of titty, cut into soup/stew chunks or fillets. The bones go into stock which itself gets frozen, as well.

Jesus. We're a family of three and spend less than $300/month but it's among too many different stores to ever qualify for a free turkey at any of them unless I pull my couponing tricks. Like, we got two 25¢/turkeys at Lidl, no minimum purchase required, but Acme had a deal last week for 10× points on Best Buy gift cards so I got the maximum, $500 worth, no activation fee. That's 5000 points literally for free. And not only can 400 points be cashed in for $7 off meat purchases, /but they can be stacked/ so we got turkeys from Acme for practically nothing since we're gonna buy stuff at Best Buy anyway. The only problem is that you can only cash in four of those $7 off rewards at once. So I got one 23.something-pounder and and a tiny 8.65lb bird for $32something less $28 in meat coupons = $4ish for 32lbs of meat IE less than 13¢/lb.
Even if bones make up about 40% of a turkey's weight, that's still less than 32¢/lb for boneless meat and you get bonus stock out of it, to boot. When else are you gonna get meat that cheap? And we still have 3400+ points left to use up.

Our haul was 65.4ish pounds of turkey for less than $12.50 (can't remember how much that 23ish pound one weighed).

May as well give a review of this BTW. Turkey was decent, I think it could have used a little more seasoning but for a breast cooked on its own it was solid. Stuffing was surprisingly great. Potatoes were decent. Gravy was underwhelming and there was nowhere near enough, I had to make some extra with regular chicken stock. Cranberry sauce was fine. Green beans were green beans.

All in all it wasn't bad for $35 and minimal work compared to a "real" thanksgiving dinner but it wasn't amazing either.
