i don't get the jokes either. i grew up with it and it's awesome. you can try added habaneros to it sometime. It's somewhat a versatile dish really because you can experiment adding things too it, such as peppers or trying different top sauce recipes.

it's delicious when done correctly, and frankly even a "mid" meatloaf can usually be salvaged with enough gravy or A1 sauce. Plus the leftovers are great for sandwiches.

Exactly. Most food memes that came about with things like meatloaf, Brussels, broccoli, cauliflower, etc. came about because of implications that suburban American white women have no idea how to cook so they make food taste bad. And it’s true, a lot of them under season everything. And meatloaf is easy to make extremely bland if you just use ground beef. But meatloaf is very good if you actually put effort into it. Use beef and pork, actually sauté the onions, put in proper seasoning and herbs, put in carrots, etc.

I was also one of the people who grew up hating meatloaf because my mother made it so shitty. Ground beef, raw onion, milk, eggs, bread crumbs, I don’t think she even put anything else in it a little bit of salt and pepper. It was like a tasteless hockey puck

It's good if you make it good, one of the most variable dishes in common American cuisine because it's a family thing and everyone has their own series of ingredients. Common things are eggs, ground beef, cubed bread/bread crumbs. But beyond that you have various spices, sauces, vegetables, other meats other cuts of meat, so it's one of those dishes that if you make the one you're familiar with it brings you back to a place, but if you have one that's different it reminds you how far you are from home.
In 6th grade they sent us all to a weeklong outdoors camp where we were put into cabins, given education in nature stuff and free reign over a particularly rural forest environment. The thing that stuck out most was the meatloaf, which was just this dry full of weird shit testament to not being home. It was different and you knew it was. Nobody got molested though.

I love my mother with all my heart but I'm not gonna pretend her cooking is amazing just to gas her up. She did her best and kept me fed growing up, and I deeply appreciate that, but it is what it is. She knows her cooking isn't the best and now I cook all the holiday or other get together meals because we both know I'm better at it, and she appreciates it because she can rest and I get to give something back to her. It's a healthier relationship than you probably have.

If you cook your meatloaf well it gets a really nice crust on top. There's just something satisfying about having nice thick slices rather than bite-sized meatballs. Very hearty. It's definitely a winter comfort-food sort of thing. If it's juicy and well-seasoned, with mashed potatoes and veggies and brown mushroom gravy, it really hits the spot
