How would you improve this brunch plate? I made this and am being told I’ll be doing it again on Christmas Day for my in laws. Would love the input of ck in order to improve the vittles on display in both appearance and flavor.

Made hollandaise and home fries.

If you chop your own parsley fresh you can dry it out yourself so it still has some herbal floral qualities, if you cant find a jarred dry parsley that smells good.
The 'bite' of fresh green parsley can throw things off sometimes, depending on where it's used, and its why i think dry is better than fresh on potatoes here

i should've said the "chew" of fresh parsley. It's kinda fibrous, and if you chop it ultra tiny, it starts to turn into paste, both things that don't happen with dried flakes

the potatoes look a bit dry and overcooked. the steak I'm sure tastes fine but it doesn't look appealing, might be more attractive if you pre-sliced it but then you'd want to serve it immediately. less sauce on the asparagus, just put the rest in a bowl and let people add more if they want. also I would go with rectangular plates.

Smaller plate OP, will make for a better presentation. Dollop of sour cream or some shredded Reypenaer cheese and chives on those taters.

Adding some chopped peppers and onions to the potatoes would add a bit more zest and color to the dish.

The poached eggs with asparagus looks good, but I would personally go with fried eggs with steak. Just my preference though.

It mostly looks fine. Find a better cooking method for your potatoes. They look sad and parched. Add a pile of sautéed mushrooms to each plate. Maybe a salad plate for each person with a green salad to balance the heaviness of the meal. Btw I don't mean to be rude, but are you all great big fat people? Steak, eggs, potatoes, and 'gus is a hefty lunch and I assume you're all eating an even bigger Christmas Day dinner later after that massive lunch.

Large plates, way too close to the edges. Steak needs a garnish and the potatoes need more effort, like peppers or sour cream and chives. Besides that the portions are oversized and every thing on the plate is dense. Would swap the potatoes for a red slaw, and you'd cleanse your palate.

You may not believe me, but I love boiled turnips. It was eaten all over Europe and loved until the Americans brought potatoes from the Aboriginal Americans. I would add boiled turnips. It's a brunch. It needs bread, cheese, fruit, charcuterie, honey, jam, coffee, smoked salmon, Champagne and chocolate rain.

Garnish the egg with paprika or pimento and chives, not green onion or scallion

Roast potatoes are too dark, maybe make scalloped potatoes or au gratin

Add a sliced tomato and minced shallot tomato salad for a little red, just salt, oil, and vinegar, maybe cracked pepper

Decorate the steaks with a little scoop or quenelle of compound butter on top

Add 1 slice bacon per plate
Add 1 slice white bread toast with butter per plate
Small fruit salad (melon, kiwi, banana & berry)
Don't do roasted potatoes, make homefries and top with pepper-jack cheese, melted.
Filet-Mignon instead of the current steak cut, and 4-6 oz. per plate
Reduce the amount of asparagus to like 3 spears per plate.
Coffee or Tea.

You have too much on the plate for breakfast which isn't palatable in the morning or easy to digest.
