How would you improve this brunch plate? I made this and am being told I’ll be doing it again on Christmas Day for my in laws. Would love the input of ck in order to improve the vittles on display in both appearance and flavor.

If you chop your own parsley fresh you can dry it out yourself so it still has some herbal floral qualities, if you cant find a jarred dry parsley that smells good.The 'bite' of fresh green parsley can throw things off sometimes, depending on where it's used, and its why i think dry is better than fresh on potatoes here

Maybe a salad plate for each person with a green salad to balance the heaviness of the meal. Btw I don't mean to be rude, but are you all great big fat people? Steak, eggs, potatoes, and 'gus is a hefty lunch and I assume you're all eating an even bigger Christmas Day dinner later after that massive lunch.
