The major theories are a fish sauce, like Asian Fish sauces or garum, or a soy type sauce. Fish sauces were still made in some areas of the Mediterranean and Europe, which should indicate if the Euopean merchants had sny clue how the original “Ketchup” was made, they should have been able to reproduce the sauce somewhat accurately. Soybean cultivation in Europe supposedly only started in the mid 1700s, so making a soy sauce in Europe around the time the word “ketchup” first appeared, (around a hundred plus years earlier), in Europe would have been impossible, so a soy based sauce seems potentially more likely to me.
