How do you choose which hot sauce to use? I always end up being paralyzed with indecision and then I don't use them at all

I only keep a few in stock that I actually use so they're pretty easy categories

I try different brands and stuff so I wind up having more like 6-7 in stock at any one time but you get the idea

right now for a sweeter hot sauce i'm digging this gator hammock shit. it's "sweeter" than other hot sauce (ie i taste more habanero than vinegar) while not being too spicy
lousiana is definitely my staple but sometimes you want to mix shit up

Hot sauce is quite clearly for the bottom of the barrel. They're either cooking something mediocre or ordering something mediocre and they throw the hot sauce on to """elevate""" the dish. Pretty pathetic to witness and they think they're connoisseurs or aficionados
