Mozzarella I used to strongly dislike cheese and I was not a picky eater growing up just didn't like milk and cheese but I always loved mozzarella. Now that I have an adult palate it's still my favorite I love both regular and bufala and I can have other cheeses.

Gournay's a coarse cream cheese - similar to normal cream cheese, just a higher acidity and fat content - I get decent results with heavy cream (not whipping cream - no carageenan), a bit of lacto culture (yogurt), a quick trip on low heat with a squirt of lemon, some salt, a quick straining, and a trip into the food processor with whatever I'm adding to it.
Or just add a squirt of lemon or vinegar to some cream cheese, add a knob of butter and pop it into the blender - same same, just different different.
