It's from a French dialectical name.
The Jerusalem artichoke is actually a type of sunflower (Helianthus) which, in this dialect of French, is called girasole, spelled the same as the Italian word for sunflower though pronounced slightly differently and with the last syllable cut off: zhee•ra•sol. Sunflower in standard French is tournesol.
The French name was misheard by English speakers as Jerusalem.
Girasole. Jerusal[em]. And there you have it: the origin of the English name.
btw, its sunflower status is reinforced by some of its other common names like sunchoke and sunroot.

I've not had it in years but I don't remember it having any unexpected flavour. Just kinda tastes of artichoke hearts to me but with an ungodly tough texture that needs 37 years of boiling to make edible. It's really not worth the effort.

Nevermind. Let's say the thing is pretty high in fodmaps. It bloats me a lot and gives me the most painful gassy bowel movements there are. Lacto fermentation solves that. Also, here it's survival war food to old people. It's a major incident if you serve them that. To farmers it's pig food. Same offense.
