It just tastes bad. It's mushy. It's expensive. Beyond is probably better than Impossible at least, Impossible adds yeast and vitamins which makes it taste like shit. It's trying to fill a demand but it's not a good product to do so.

Better to make a vegan chick'n fillet burger/chick'n sandwich. The seitan striations can mimic the muscle fibers of chicken fillets pretty well and you can make the seitan dough with a can of pureed beans for the mixture to make it a complete protein.
The problem with making a seitan burger Is that the texture will never be quite right.
