Nitrogen is what keeps it pink. Oxygen is what oxidizes it and makes it grey. Grey meat in a nitrogen sealed flat = seal is broken.

Bottom is what meat actually looks like as soon it's dead.
Top is artificially kept red by the "protective atmoshpere".
Reson for the color change is oxidation, but with even more oxygen the myoglobin color is instead fixated, hence the gas inside containing a high concentration of oxygen.

Not just at the retailer, but they set the price that they buy it from from the producer. When domestic producers refuse to bow down to the meat-jew-distributor-quadopoly, the dystopian mega corps will lobby the government to import forign beef to topple beef prices. You stupid fuck. Just think about what you just said. How would imports make prices rise in a normal economic system? They wouldnt. But when industry is consolidated under a handful of companies, you can use imports to push domestic product out of business by lowering the cost of beef
