I bought some chicken tenders on sale, seems like a waste of a good tendie to turn them into faux asian stir-fry or tacos. How do you cook a good tendy? marinades, batters, oil temps and types etc. I'm a home cook, no deep fryier.

if you mean chicken tenderloins then just bread and shallow fry them. you don't need to deep fry, although if you use a small pan you can deep fry with very little oil. I usually deep fry in a mini cast iron wok. works very good for 1 person worth of food.

You'll want to brine them in a 60/40 buttermilk to pickle juice ratio solution ideally for 24 hours. Prepare flour with seasonings, prepare eggwash, prepare breadcrumbs with seasonings. Flour->eggwash->breadcrumbs. Drop em in some hot oil till golden brown, rest on an elevated wire rack and dash em with salt immediately. The seasonings

OP, I didn't take a pic, but I made something similar to LJS. A nice thick battery with flour, some baking powder and use club soda in lieu of water (can add a little water if you want); salt, pepper, paprika, garlic powder, onion powder, and melted butter. Sadly, I don't measure nor write anything down when cooking, so I hope you can just feel it out. Maybe make small batches of thick batter, coat one tendie in 1 batter and figure out which you like I guess.

I forgot I had some left. They came out beautiful, perfect golden brown out of the fryer, but of course are ass looking now. I'll just warm them in the microwave, then finish off in the over for ~10 to crisp them ul again.
