What's the proper way to make kimchi? It seems like there's so many different ways out there and all the store brands are awful.

Kimchi is more of an overarching term like beef stew. There is no proper or true recipe, some forego chilies for example, all that matters is the proper salt fermentation. Mostly for health reasons.

like with all korean foods, whitoids should rely on maangchi's recipies
just look up her tongbaechu-kimchi recipe and do that one, you can adjust the recipe according to your liking next time
