What's the best cheese for cheese fries?

cheddar which goes on top of chili

Something that melts well but has at least some flavor. Colby jack is really good for it, or a young cheddar.
>>
cream based cheese sauce i.e. no roux

Chili con queso

It's less about the fries as it is the wine pairing.

Limburger

American, it melts extremely well and i find its flavor lends itself well to potatoes.

Cheddar doesn't melt good enough, you end up with 7 fries that have all the cheese and the rest are naked.

So many fucking hipsters in this board. The best cheese is a nice smoked brie and gouda.

The different notes add phenomenal depth and flavour, making an a dish that was mostly inedible and American, tasty and refreshing.

nacho cheese
