My coffee strength is some super low amount, like 15g coffee in 14oz of water so like 1:25 coffee to water ratio, I don't even measure anything, I just eyeball it.
I like to buy like 6-8lbs of coffee whenever costco has nice light/medium roasts on clearance for $5 per bag, it lasts me a whole year so I only buy coffee like once a year really.
All my coffee equipment is from the thrift store or from bin stores, grinders, hario drippers and filters often turn up in amazon returns.

Ok so I tried it, it's really not bad for a portable device, with coffee capsules it makes okay sippable espresso, for $20 I won't complain, this is a nice thing to carry around in your car when you want coffee without preparing anything and you don't wanna clean anything afterwards, the convenience is 10/10.

I also tried it with my own medium roast grounds, it makes weak-ass coffee this way and I don't feel like trying with espresso roasts to see if it's any better but I already drink it 1:25 so I hardly noticed, it's absolutely not espresso, it just tastes like 70ml of drip strength coffee which isn't bad for me, but having to fuss with grinding and and the tamper and cleaning it out makes a huge mess unless you have running water, just use the capsules.

i made a v60 yesterday but i put a layer of ice cubes on top of the bed of ground coffee before pouring
and then during the bloom the ice cubes settled just under the layer of bloom so my follow up just hit the settled bloom instead of the rest of the coffee underneath
by the time i did my second pour(3rd if you count the bloom) the ice cubes had melted
and when the drawdown had finished the bed was noticeably flatter and more even than previous brews(im still trying to work on my osmotic flow technique)
the coffee had more clarity but wasnt any cooler because of the ice cubes.
then i wondered if a disk or some type of layered bed made of ice could be constructed to influence the brew.
like if you had 20g of coffee split across 4 5g layers with a disk of ice in between each layer(perhaps having the ice get thicker the lower in the cone it goes giving a pseudo immersion brew for a portion of the recipe, so imagine double blooming the top layer, then as the first 3 layers melt it acts like immersion until the ice "stopper" melts returning the brew to a normal v60 profile.)

was thinking about using a french press. so standard cold brew recipe, let's say 30g coffee at a 1:12 ratio which would be 360ml water total, then divide it into four parts, so 90ml per six hours. start with 30g of coffee and 90ml, wait six hours, pour out the coffee, save it for later, then add the next 90ml of water on the same grounds, repeat until you have four 90ml brews. might be interesting

I just got a new espresso machine. Its pretty cheap, only $100. Do you guys have a preference for the beans compared to drip?

Also I usually like having a large volume of coffee to drink, so I make 2 double shots from the beans, empty it out, and 2 more, and put them into a mug, then have sweetener and cream.

Tried a bunch of specialty coffees lately and they were all shit; sour, fruity, acidic light-roast hipster slop with søy notes. Pure reddit pseudo-sophistication.

So far my favorite is pour-over Pike Place.

you can buy specialty dark/medium dark roasted coffee that isnt acidic or bitter or sour.
look into getting some saka crema bar and some Vietnamese 100% robusta.
whole bean of course.
so get a good burr grinder

for filter coffee obviously(the switch allows for traditional no impedance filter brewing as well as immersion brews that can really help darker roasted coffee, or when used by low skill/experience users)

or buy a flair 58 if you dont care for milk drinks.

There's no objective measurement for how dark a roast is. One brand's dark might be another brand's medium. I go by appearance of the beans, if they have a shiny oily sheen to them that's the best since those oils only come out like that on good dark roasts. Usually it's the "French roast" from a brand, but I've had many "French roast" beans that are bone dry and light colored so it's not always a guarantee for a given brand.

Modern pour over techniques almost always under extract the coffee and result in sour acidic brews. To get a good extraction you either need pressure (espresso) or longer brew time (French press). Espresso machines are expensive, and French press method cheap and accessible. When you use a French press you want to stir it up and let the grounds and the hot water sit and brew properly for about 5 minutes before pouring. If you don't like the sediment, you can even dump the whole slurry mix out into a pour over cone all at once and let it filter through the paper, in which case you don't even need to buy a special French press and you can use any glass container with a spout to brew and pour from.

Vietnamese robusta is nice, I like to buy a bag and if a brand's dark roast arabica is not dark enough I'll start mixing it with the robusta beans in a 20/80 or 50/50 ratio. 100% robusta can be overpowering and taste like burned rubber, but add a little to arabica and you give the cup a rich liqeur background.

vietnamese robusta is usually roasted differently(they add sugar to the roasting process)
but its also why i added "specialty" to the line above
a specialty roaster that offers authentic vietnamese robusta isnt going to be as burnt as a more commodity grade roaster.
at least in my experience.
also i included it as a sort of gauge on where their preferences lie.
for a dark roast enjoyer i'd say between vietnamese robusta and saka crema bar is the range that you want to live in.
dont go darker than the robusta and dont go lighter than the saka.

like recommending a "medium" Colombian to someone who likes "pike place" feels like a waste of time.

Acidity can be moderated with a pinch of Boiled Eggshells on top of the grounds (works best with immersion, e.g. French Press). After that, using a bit of butter or coconut oil (unsalted for dark roasts, salted for the others). If you grind the beans yourself, you have much more leeway in 'correcting' taste notes that correlate to over extraction; Darks will be the least acidic generally, Lights will be a problem for you. If you stick to pre-ground, look up the harvest times by region to min-max freshness and gassing; it's seasonal, and you'll enjoy trying new coffees year round. Merry Christmas.

i had good technique for my v60 this time but i brewed too hot.
still good.
and i made some pfeffernusse but without the glaze. to compensate i made my own orange syrup(just boiled down oranges, no sugar) and added that to the mix before resting it for 2 days in the fridge.
then bake.
so it has a subtle jaffa taste.
testing the recipe before christmas.
i'd say it was a success.

The Encore is still the least expensive electric brew grinder that's not a waste of money. Nobody is going to make something equivalent for cheaper since they've had that production line running for a quarter century at this point. There are a bunch of better hand grinders at that price now though. So its only niches now are people who single dose but for some reason can't be assed to hand grind, or those who make large 50-100gr doses for drip machines. Baratza's infinite customer service also ensures you'll be able to fix the grinder when plastic parts eventually break.

Noticed that B&W's The Natural now uses Chinese anaerobic coffee + Ethiopian washed.
Anybody know when they switched up the blend to use Chinese coffee? Drank a lot of The Natural this summer, had they already switched to using Chinese coffee then or did they switch over more recently?

there is a massive influx of chinese/SEA based specialty coffee businesses/drinkers since around the start of covid.

so catering to and collaborating with that region is good for business.

in regards to the ferments, as far as i know china just like india is only really capable of making low altitude beans so to enhance the flavor they kinda have to do some wild processing.
i only have limited experience with beans from china but so far i haven't had a bad cup.

I expect it to be pretty big among the roasters who do funky flavors but imo it seems very niche compared to washed (kinda like pu'er tea vs black/oolong/etc.)

nta, but it's typical for roasters to switch out the coffees used in their year round blends. this is due to availability of coffee (each country has a different harvest time based on the seasons, climate, latitude, etc.) and to keep up quality standards (they could bulk buy each coffee but quality goes down the longer it is in storage). so to answer your question, yes it's the same blend and should taste the same. different coffees can have the same profile even if they're different origin, variety, process, etc. it's up to the roaster to find these similar coffees in order to best recreate the blend profile and swap out blend components when needed.

Everyone says this and maybe you are one of the few people who wont actually mind long term but it does get annoying when every time you want some coffee you have to hand grind. Early in the morning, get home tired and just want a cup of coffee, making coffee for multiple people, doesn't matter you have to hand grind first, every single cup, forever and most hand grinders don't hold very much.
I have two nice manual grinders (lido and pharos) and I would never not have electric grinders available aside from short term travel.
There is also a ceiling with hand grinders as they can only really get so good and mostly limited to conical burrs. I think you're looking at just the Apex, Orca, and Pietro for flat burr manual grinders.
Manuals are fine if you are just starting out and not sure if you want to get into it or if you are tight on money but long term I couldn't imagine being manual only forever.

odds are, no matter what you do, that's what the coffee will taste like, especially if it was roasted dark enough the beans are that oily. at a certain point, roasting literally destroys all the flavor compounds and carbonizing the bean. that's why all dark roasts pretty much taste the same. no equipment adjustment or upgrade will undo the destruction of those flavor compounds. that being said, 4.5 for a dark roast is very fine with the ZP6. i'm usually between 4-5 with medium roasts, so i recommend bumping it up to probably a 6. it's also worth noting that dark roasts are way easier to extract than lighter roasts, which is why you can increase the grind size. however, it's still a dark roast so this probably won't do too much. you could also bump the water temp down to 90.

This is why I got a basic bitch bambino. I'm not sure I'll actually use it much. It looks like a lot of work and there's a good chance I'll give it to a friend who spends too much money at timmys/starbucks/beaners. I know she'll use it. FWIW, that one button is the primary failure point of the machine and you might have to periodically change it out. I'm not sure exactly how it's killing buttons, but I'll need to do my second replacement in two years soon.
It's not like it's a hard repair, and it's better than something complex falling, but it's just a silly problem to have.

This is the IRL Sneed's but in reverse. 29950 w12 mile. It was a originally afeed and seed, then a hardware store, and it's now (among other things) a rub and tug. We sold the building and this is partly why I can afford things. If you walk up the stairs to the "massage parlor" you can still smell the 80 years of grass seed in the stairwell.
There's a coffee shop where the lawn and garden and paint sections used to be.
This is all coincidence by the way. My brother didn't even write the Sneed joke, and didn't make the connection until I pointed it out (and the hardware was still open at the time.) But by some mysterious force, our grandfather's shop manifested as an internet meme. Life is weird.
