I'm not snobbish enough to post in these threads, ppl only ever reply to me with "grim" when I post. My coffee strength is some super low amount, like 15g coffee in 14oz of water so like 1:25 coffee to water ratio, I don't even measure anything, I just eyeball it.I like to buy like 6-8lbs of coffee whenever costco has nice light/medium roasts on clearance for $5 per bag, it lasts me a whole year so I only buy coffee like once a year really. All my coffee equipment is from the thrift store or from bin stores, grinders, hario drippers and filters often turn up in amazon returns. Thanks for reading my blog, see you next year!

>>21761944>>21762600Ok so I tried it, it's really not bad for a portable device, with coffee capsules it makes okay sippable espresso, for $20 I won't complain, this is a nice thing to carry around in your car when you want coffee without preparing anything and you don't wanna clean anything afterwards, the convenience is 10/10.I also tried it with my own medium roast grounds, it makes weak-ass coffee this way and I don't feel like trying with espresso roasts to see if it's any better but I already drink it 1:25 so I hardly noticed, it's absolutely not espresso, it just tastes like 70ml of drip strength coffee which isn't bad for me, but having to fuss with grinding and and the tamper and cleaning it out makes a huge mess unless you have running water, just use the capsules.
>>21764718hey i left that post last night and i just want to apologize. i think what you folks have going on in here is great, and i just don't really know where to start. i suppose with the link in the op. i'll be better. sorry.
...thats a bump too isnt it...
kekwell heres a genuine posti separated the bloom from the rest of my brew just now and ill be damned if it isnt the most delicate cup ive gotten from these beans the bloom doesnt taste bad but it does have a strong flavor, very acid forwardhave any of yall ever tried that?
>>21765654what do you mean by separate, anon? i'll typically let my bloom sit for two mins before doing the rest of the water. very simple, low effort two pour recipe but you get good cups
>>21765663i simply poured the bloom over a different vessel and replaced it with my carafe after i had finished iti also only did one main pour, i used a 1:18 ratio with my melodrip bc the grind was relatively fine for my kalita wave and i didnt want to clog it
>>21765666ah i see. i've done several split brews where i'll brew each third/quarter of the brew into a different cup to see how the extraction changes throughout the brew. same idea as a split shot of espresso. i used to play around with some very low ratio brews (1:10 to 1:12) as well. the idea was that i've effectively "removed" that last third/quarter
>>21765654if you mean separating by doing the bloom on one cup and then the rest of the brew in another, it will be delicate since the most concentration will be done at the first phase, the rest will have a lighter bodydid you prefer it? i usually like to do big blooms (1:3+) so the cup is brighter and more acidic, which is my preference
>>21761898where can i buy the pedo mug
>>21765689>split brewsinteresting, ill have to try that sometime>>21765699i dont know if id say i prefer it but it was a very interesting new expression of this coffee, i could taste tealike notes that the bloom would certainly have coveredits a loud coffee, a natural ethiopian, so im not surprised by the results but i am pleased to have a new technique in my proverbial kit
coffeebut its too hot for espresso...
>>21766166Hyperchilled espresso is the way.
>>21766466i made a v60 yesterday but i put a layer of ice cubes on top of the bed of ground coffee before pouringand then during the bloom the ice cubes settled just under the layer of bloom so my follow up just hit the settled bloom instead of the rest of the coffee underneathby the time i did my second pour(3rd if you count the bloom) the ice cubes had meltedand when the drawdown had finished the bed was noticeably flatter and more even than previous brews(im still trying to work on my osmotic flow technique)the coffee had more clarity but wasnt any cooler because of the ice cubes.then i wondered if a disk or some type of layered bed made of ice could be constructed to influence the brew.like if you had 20g of coffee split across 4 5g layers with a disk of ice in between each layer(perhaps having the ice get thicker the lower in the cone it goes giving a pseudo immersion brew for a portion of the recipe, so imagine double blooming the top layer, then as the first 3 layers melt it acts like immersion until the ice "stopper" melts returning the brew to a normal v60 profile.)
hey guys i usually just dissolve some caffeine in a cup of piss and it tastes perfectly fine, really don't understand the trouble you make here

>>21766586>>21766600Costa Rica washed, sounds good
>>21766587>how do you plan to do thatwas thinking about using a french press. so standard cold brew recipe, let's say 30g coffee at a 1:12 ratio which would be 360ml water total, then divide it into four parts, so 90ml per six hours. start with 30g of coffee and 90ml, wait six hours, pour out the coffee, save it for later, then add the next 90ml of water on the same grounds, repeat until you have four 90ml brews. might be interesting

>>21762203>>21762376Those beans were fucking tan, I know you guys like light roasts but holy shit they were practically raw. Whole thing has to be an elaborate shitpost.
>>21766745will do, but i don't have a french press right now so might be a bit. i could mess around doing it with a mesh strainer but i'm not in any rush. it's an easy experiment if another anon wants to give it a go before i get around to it

>>21767046ok but the non meme answer to your totally not bump post isyesyou can buy specialty dark/medium dark roasted coffee that isnt acidic or bitter or sour.look into getting some saka crema bar and some Vietnamese 100% robusta.whole bean of course.so get a good burr grindervaria vs3/df54/df64as well as a hario switch and compatible filter papersfor filter coffee obviously(the switch allows for traditional no impedance filter brewing as well as immersion brews that can really help darker roasted coffee, or when used by low skill/experience users)or a Breville Bambino/Bambino Plus for cheap espresso.dont bother buying machines with built in grinders.or buy a flair 58 if you dont care for milk drinks.
I fine tuned a home roast to have strong peanut butter notes. It was a lighter roast that was very sweet and had enough aromatics that my wife assumed I wasn't drinking coffee when she walked by. Wonderful drinks all week!
>>21767087High rpm espresso burrs will make great pourover for your tard wife.
can i ask about shitty korean instant coffee in here or will i be shot and killed
>>21767046There's no objective measurement for how dark a roast is. One brand's dark might be another brand's medium. I go by appearance of the beans, if they have a shiny oily sheen to them that's the best since those oils only come out like that on good dark roasts. Usually it's the "French roast" from a brand, but I've had many "French roast" beans that are bone dry and light colored so it's not always a guarantee for a given brand. Modern pour over techniques almost always under extract the coffee and result in sour acidic brews. To get a good extraction you either need pressure (espresso) or longer brew time (French press). Espresso machines are expensive, and French press method cheap and accessible. When you use a French press you want to stir it up and let the grounds and the hot water sit and brew properly for about 5 minutes before pouring. If you don't like the sediment, you can even dump the whole slurry mix out into a pour over cone all at once and let it filter through the paper, in which case you don't even need to buy a special French press and you can use any glass container with a spout to brew and pour from. >>21767090Vietnamese robusta is nice, I like to buy a bag and if a brand's dark roast arabica is not dark enough I'll start mixing it with the robusta beans in a 20/80 or 50/50 ratio. 100% robusta can be overpowering and taste like burned rubber, but add a little to arabica and you give the cup a rich liqeur background.
>>21767345>theres no objective measurementAgtron scale.
>>21767345>100% robusta can be overpowering and taste like burned rubbervietnamese robusta is usually roasted differently(they add sugar to the roasting process)but its also why i added "specialty" to the line abovea specialty roaster that offers authentic vietnamese robusta isnt going to be as burnt as a more commodity grade roaster.at least in my experience.also i included it as a sort of gauge on where their preferences lie.for a dark roast enjoyer i'd say between vietnamese robusta and saka crema bar is the range that you want to live in.dont go darker than the robusta and dont go lighter than the saka.at least imolike recommending a "medium" Colombian to someone who likes "pike place" feels like a waste of time.
>>21767353You misunderstand me, or I communicated poorly. When two different bags of coffee say "Medium", there is no industry standard by which that "Medium" is defined, and each bag may have wildly different levels of roast.
>>21767353>Agtron scale.sure but you have to make sure that a roaster is following it.
>>21767279Yeah but since I'm going to be gone all day and it's winter I'm trying hot filter and eventually espresso. I bought a technivorm with the thermal pot so she can have warm coffee all day while I'm working. I also got a bambino coming but I don't even want to think about that. >>21767332Why would you want shitty Korean instant coffee more than shitty US instant coffee?
>>21767046>ground>hate high acidityAcidity can be moderated with a pinch of Boiled Eggshells on top of the grounds (works best with immersion, e.g. French Press). After that, using a bit of butter or coconut oil (unsalted for dark roasts, salted for the others). If you grind the beans yourself, you have much more leeway in 'correcting' taste notes that correlate to over extraction; Darks will be the least acidic generally, Lights will be a problem for you. If you stick to pre-ground, look up the harvest times by region to min-max freshness and gassing; it's seasonal, and you'll enjoy trying new coffees year round. Merry Christmas. >>21767345>There's no objective measurement for how dark a roast isIf it didn't meet the Second Crack threshold (and/or more than 50% of the beans did so), it's a Medium.

>>21767542>If it didn't meet the Second Crack threshold (and/or more than 50% of the beans did so), it's a Medium. You can define Medium however you like, it doesn't stop a different coffee roaster from defining it in a different way and still slapping Medium on the bag,

>>21769529can you boil coffee cherries before drying and roasting them?
>>21768837The Encore is still the least expensive electric brew grinder that's not a waste of money. Nobody is going to make something equivalent for cheaper since they've had that production line running for a quarter century at this point. There are a bunch of better hand grinders at that price now though. So its only niches now are people who single dose but for some reason can't be assed to hand grind, or those who make large 50-100gr doses for drip machines. Baratza's infinite customer service also ensures you'll be able to fix the grinder when plastic parts eventually break. Also if you're a burger the zerohero Z5 is still $35 on amazon.

Noticed that B&W's The Natural now uses Chinese anaerobic coffee + Ethiopian washed.Anybody know when they switched up the blend to use Chinese coffee? Drank a lot of The Natural this summer, had they already switched to using Chinese coffee then or did they switch over more recently? Also has anybody had the Black Sheep by B&W (just the Chinese coffee, not as a blend)? 30 day anaerobic ferment sounds crazy, this is coming from the same region as pu'er tea
>>21772678>Anybody know when they switched up the blend to use Chinese coffee?because the chinese specialty coffee industry AND audience is BOOMING.there is a massive influx of chinese/SEA based specialty coffee businesses/drinkers since around the start of covid.so catering to and collaborating with that region is good for business.in regards to the ferments, as far as i know china just like india is only really capable of making low altitude beans so to enhance the flavor they kinda have to do some wild processing.i only have limited experience with beans from china but so far i haven't had a bad cup.
>>21772689>because the chinese specialty coffee industry AND audience is BOOMINGi had an excellent washed ethiopian landrace from minmax earlier this year. that being said, everything else i've had out of china hasn't been noteworthy, however, i do expect that to change. they're putting a ton of money into developing their coffee industry so expect some seeing some great chinese coffee popping up over the next few years

>>21772887hate to say it anon, pretty much all coffee comes from third world countries. the average american/european would be disgusted by how it's handled and processed. most wash tanks don't get properly cleaned until end of harvest season, workers will step on the coffee when it's on the patios, not to mention the sheer amount of herbicides, pesticides, fertilizers, etc used during production. so i can guarantee that china is no better or no worse than any other country that produces coffee

>>21772689That isn't an answer to my question, I'm trying to figure out if this is the same blend that I had in the summer or if it was changed out this fall/winter. Checked my bags and they don't say anything about the actual beans, just tasting notes.>>21772741>so expect some seeing some great chinese coffee popping up over the next few yearsI think the big problem is that Yunnan isn't that high altitude; it's <1600 masl so the processing has to do all the heavy liftingI expect it to be pretty big among the roasters who do funky flavors but imo it seems very niche compared to washed (kinda like pu'er tea vs black/oolong/etc.)
>>21773120>That isn't an answer to my question, I'm trying to figure out if this is the same blend that I had in the summer or if it was changed out this fall/winternta, but it's typical for roasters to switch out the coffees used in their year round blends. this is due to availability of coffee (each country has a different harvest time based on the seasons, climate, latitude, etc.) and to keep up quality standards (they could bulk buy each coffee but quality goes down the longer it is in storage). so to answer your question, yes it's the same blend and should taste the same. different coffees can have the same profile even if they're different origin, variety, process, etc. it's up to the roaster to find these similar coffees in order to best recreate the blend profile and swap out blend components when needed.>I think the big problem is that Yunnan isn't that high altitudehigh altitude =/= high quality. this is a major misconception. altitude is a single factor in coffee production. finca takesi is the highest altitude farm in the world and i don't think any of their coffees have ever placed in cup of excellence. they still produce excellent coffee, but according to the logic of "higher altitude = better coffee" they should always win COE>but imo it seems very niche compared to washed what do you mean, a lot of coffees coming out of china are washed?

is there any reason to use an electric grinder over a hand cranker if i don't mind cranking? maybe it'll bother me when i'm 70+ but i dont mind
>>21773767rpmtorque
>>21773767Everyone says this and maybe you are one of the few people who wont actually mind long term but it does get annoying when every time you want some coffee you have to hand grind. Early in the morning, get home tired and just want a cup of coffee, making coffee for multiple people, doesn't matter you have to hand grind first, every single cup, forever and most hand grinders don't hold very much. I have two nice manual grinders (lido and pharos) and I would never not have electric grinders available aside from short term travel. There is also a ceiling with hand grinders as they can only really get so good and mostly limited to conical burrs. I think you're looking at just the Apex, Orca, and Pietro for flat burr manual grinders. Manuals are fine if you are just starting out and not sure if you want to get into it or if you are tight on money but long term I couldn't imagine being manual only forever.
>>21773783as long as i'm cranking the beans into the burrs does the fact that i'm not a machine really impact it? or are you just telling me that i should be cranking it as fast as possible

>Z5 grinder back up to $140rip
>>21775453>just tastes harsh and unpleasantodds are, no matter what you do, that's what the coffee will taste like, especially if it was roasted dark enough the beans are that oily. at a certain point, roasting literally destroys all the flavor compounds and carbonizing the bean. that's why all dark roasts pretty much taste the same. no equipment adjustment or upgrade will undo the destruction of those flavor compounds. that being said, 4.5 for a dark roast is very fine with the ZP6. i'm usually between 4-5 with medium roasts, so i recommend bumping it up to probably a 6. it's also worth noting that dark roasts are way easier to extract than lighter roasts, which is why you can increase the grind size. however, it's still a dark roast so this probably won't do too much. you could also bump the water temp down to 90.
Turned the wife loose with the mocha master so she can just make hot coffee while I'm not there. Now she's saying she doesn't like the natural bean taste hot. Yesterday she fucked up and ground the beans too fine for filter coffee. I had her set it to 65 on the df64 this time. I'm not even there, I'm hearing about this in the phone at work. Of course I bought a bunch of bags of the beans she liked with the pour over iced I was making. I'll use it eventually, but for a filter drip through a mocha master, what should I try next? Also, I was going to try making espresso for the first time over the weekend. What should I be looking for in a bean for that? I'm tempted to get something cheaper to experiment with, but that might also skew the results. Do people generally use unwashed beans for espresso? Now she's saying she likes to okay but has to dial in the sugar (less) and cream (more.)Well, at least I'm not buying dozens of cans of starbucks and monster a month anymore. That shit is garbage.

The whole "I only grind the beans she make the coffee" thing wasn't part of the plan. It occurred organically. Also, deliberately not making her own was a way of limiting consumption. It's still over a dollar per cup with the fancy beans. She did get desperate when we were out and bought some 8 o'clock brand beans. How long do you all let beans rest for various scenarios? There are several factors like roast level and brew method that affect it, and then everyone's got their own opinions. For example, I've heard some people say that lighter roasts should be rested only about a week for espresso, but then some people won't even look at them until 2-4 weeks.>>21777691>I like the one button simplicity of the DF. The w+'s complex electronics are a failure point that's a trade off for features that don't interest me.Thanks for reminding me to order a new button.FWIW, that one button is the primary failure point of the machine and you might have to periodically change it out. I'm not sure exactly how it's killing buttons, but I'll need to do my second replacement in two years soon. It's not like it's a hard repair, and it's better than something complex falling, but it's just a silly problem to have.
This is the IRL Sneed's but in reverse. 29950 w12 mile. It was a originally afeed and seed, then a hardware store, and it's now (among other things) a rub and tug. We sold the building and this is partly why I can afford things. If you walk up the stairs to the "massage parlor" you can still smell the 80 years of grass seed in the stairwell. There's a coffee shop where the lawn and garden and paint sections used to be. This is all coincidence by the way. My brother didn't even write the Sneed joke, and didn't make the connection until I pointed it out (and the hardware was still open at the time.) But by some mysterious force, our grandfather's shop manifested as an internet meme. Life is weird.
