A standard kitchen knife is good for 90% of what you'll be cutting in the kitchen, and okay, but substandard for 9% more. You can get by with just that, but adding a small knife, a boning knife and a long, straight swordlike knife to your arsenal will improve your cooking capabilities imensely. You should also have a cleaver and a bonesaw for when you butcher an animal youself or otherwise bring home a big leg of meat.
