I saw this one episode of Japanology where they showed how a sushi master can put the fish and rice together so well that the connection is four times stronger than that between what a noob usually does. The scene was written to appeal to lower middle to middle class flyovers who think high end sushi spots are intimidating. Those people would be weird about a rich person eating with their hands, since they're flyovers who just repeat etiquette/social rules without understanding them (ie: no white after labor day is not a real thing and repeating it outs you as a poor), so the director told the actor to use chopsticks.

In the past when social stratification was more important, the upper class had endless etiquette rituals because being able to spend the time learning and memorizing and practicing them, and the effort keeping up with them, was a status symbol in itself. A peasant could not afford 5 different knives per meal, would not want to spend the time washing them afterwards, would not have the time or opportunity to learn how to use them, and would not have the time (or space, if eating in the field for example) to even lay them out. If you were a noble's kid you'd get a private tutor giving you etiquette lessons and drilling you about the order of knives and the correct curtsy for each social class of a potential visitor and then you'd dine at a table meticulously prepared by servants with 15 pieces of cutlery per person and spend several hours on a social event of a meal, and all of that marked you out as a noble.

Nowadays it's part tradition and part some statement of being cultured. The thing is nowadays anyone can look it up online and learn the finer points of just about anything, so it's no longer a mark of birth or wealth; rather it's a mark that you care about "proper" things. Of course correcting others on not doing it the proper way is very rude and therefore uncultured and therefore self-defeating.

And of course there are some foods where the rules are there for a reason, to improve enjoyment. Like matching the bread to the foix gras, it's not a rich person thing, it's just that if you eat it on a seeded sourdough for example instead of brioche, it just doesn't go well together. Unless you've eaten enough foix gras on different breads to know that you actually prefer it on seeded sourdough for some reason, but that's different to doing it because you grabbed the first bread you had laying around and didn't care.
