It's just vegetable broth actually. Onion, celery, carrots with white wine. Beef fond gets a bit expensive to make regularly.

It's an oven dish, just one I had lying around because I don't have the proper deep ones for soup. It's more suited for lasagna I guess.

Lessons learned:
>>21771437 was right, onions needed to be rendered down more to taste sweeter
Don't use celery for the broth.
Needs a full convering of cheese and gratin at 220c for 10-15 minutes.
And I need the deeper oven dishes.
Possible changes: fry the onions in lard instead of butter.
I'll see when I try this again.

I've been throwing anchovies in like every soup because it adds layers to the soup and makes the canned anchovies palatable.
