Modern electric ranges get plenty hot, a lot of the gas vs. electric stuff comes from when electric stove tops looked like this. My main gripe with gas is if god forbid something spills on the burners it's a pain in the butt to clean. Also an open flame doesn't do much to pans that radiant coils won't aside from making it easier to ignite the contents of a pan, but that isn't an issue if you aren't retarded.

Electric stovetops for some goddamn reason don't use PWMs which mean they just turn on and off to vaguely maintain temp. Just universally garbage for anything involving precision.

I've had both gas and electric, and the glass top electric that came with my house works just fine for my needs. It's easy to clean, heats up reasonably well (one of the burners is surprisingly fast), doesn't seem to heat up the kitchen as much, and works for what I need. It also has real knobs for control; something like >>21772262 or >>21772844 sounds like a goddamn nightmare. If I ever do want a gas flame I can use the side burner on my grill.

My condolences, I still sometimes have flashbacks to the shitty coil stove in my first apartment. I'd have to turn all 4 dials to high just to see which ones felt like working at that moment and they'd reassign themselves randomly to whatever coil they felt like. Put a bright spin on it and consider it training in an adverse environment. You could also use this opportunity to git gud at grilling or use the broiler more.

Primary issue is that electric stoves are binary; they're either just on or off and the temperature setting just controls how long they're on for to vaguely approach it. A flame gives actual fine temperature control instead of peaking hot enough to burn the bottom of what you're making if you don't move it and then shutting off to get colder over time

I am almost 50 and gave used both extensively and it sounds tobme like you've barely if at all ever used an electric stove. I find it far, far easier to get a consistent low heat with a coil element than a gas burner. That's actually my main issue with it, I can take the oldest, thinnest piece of shit pot I have and put some soup or some shit to heat up on a coil stove, turn it on minimum and it's good, I can ignore it and come back to hot soup. With gas I have to get the flame nice and low but also if it's a shitty pot, it means all the heat is now centered on that tiny flame where it'shot so if I'm not constantly monitoring it and sturing I end up with burt soup in the middle of the pot and cold soup everywhere else. I don't hate gas, it's what we have currently as our primary stove. But I also keep a single element hot plate around because it's convenient and when we get a new place I'm going back to electric.

that heating element issue really isn't so bad when you consider that thermal inertia is a thing, and switching the element on and off will not switch it between too cold and too hot, but increase and decrease the temperature of the heating element until it reaches the target temperature.

a low gas flame could be too small to cover the entire bottom of a large pan, and thus cause a heat gradient and uneven cooking.
you can somewhat counteract that by using a thick, cast iron pot with lots of thermal inertia.

Yeah, gas isn't bad and if you have good quality cookware it's not an issue. But this whole notion that it's somehow far superior to coil elements has never rung true to me. Almost 50, been cooking pretty much my whole life and have used both extensively. Would never choose a gas stove over electric.
