What's a food that you thought would be nasty but turned out to be delicious? For me it's fischbrötchen. I don't love fish and it's not a photogenic food but it's actually really tasty

The idea of sushi to me seemed terrible. My initial thought was "why would I ever want to eat room temperature rice and raw fish?"
But it ended up being a lot better than I expected. The Japanese really cooked with that one. But not literally (sometimes). Hah!

Years ago, maybe from the Frugal Gourmet (?), I learned the difference between purchased chicken broth and making it the chinese way. When I pressure cook chicken for "chinese" style stock, I will have ginger and leeks, not the american style celery, parsley, carrot and bay/sage flavor profile. It's worth it to make your own won ton, hot n sour, and egg drop soups to start with the right flavors.

I grew up not liking seafood, even the smell of it cooking, too much fear putting my hands in the bait bucket and getting poked by live shrimp, or maybe just watching fish getting gutted. But, I do realize it's mental, LOL, and delicious fish is fine; halibut, snow crab, stuffed or fried clams, moules frite, blackened mahi, but I still have the hurdle of mental trauma before that first bite. Mind games.
