Next Friday a girl friend is visiting over the weekend. Friday is her birthday. I'm on business travel on Wednesday and Thursday and will arrive back home on Thursday around 11pm. Work next day, probably leaving early around 2 pm. She'll likely come around the later afternoon/early evening. What kind of birthday cake should I make in the limited time I have to impress her? Can I reasonably prepare something on Monday/Tuesday? Should I do late-night baking at Thursday? I thought about a pancake cake filled with jam and cream. Do you guys have any ideas?

If she’s a chocolate fan like many women, it would be very simple to do a chocolate cake, chocolate frosting, and maybe a middle layer of cherry or raspberry preserves.Also i wouldn’t advise baking before your trip. A crepe cake is a little fancier but no one's expecting you to learn to make paper thin crepes alluvasudden. Also, do it the night before. Cakes go stale fast, especially homemade cakes. If you do one Monday/Tuesday it may dry out before Friday.
