I make bread better than a lot of dedicated bakeries I've been to, and much better than what's at grocery stores(most people with a week or two of practice could do better than their grocery store). Usually if I'm getting a bread item from a bakery it's for the convenience because some things are more annoying to make than others. Pastry is a different beast and I'm not nearly as good at that.

yo focaccia is crazy good, did you lightly moisturize it by hand bake it quickly pre sandwich assembly because thats where flavor town is at. A little wok hey of sorts pre ingestion goes a looooooong way. Also i gotta say they are going to be dissapointing if they arent greased up properly which kinda defeats the purpose but they are a culinary experience nontheless

I've had excellent french bread with tasty french cultured butter, it's not the 1800s anymore. Travel is easier in modern day and even your guy is on social media these days. I'm happy you live near a particular bakery, but it's weird you keep bringing it up like it's all you have going on and nobody goes to france to eat food there. 20 years ago i worked in a grocery store bakery. Based on previous sales we knew how much of each type of bread to put out by day of the week knowing customers have routines. Very little is wasted and if something sits out for a few days you slap a 50% off sticker on it and it's gone within minutes. Some people even walk up to the counter and ask if you can put the sticker on something because the bread was baked 2 days ago.

Also, and this might be a Canada thing, but we would bake like 20 baguettes at around 6PM and put them out steaming in their bag and there would be a line of people waiting for the "fresh stuff" to take home for dinner. Not realizing it was frozen pre cooked baguettes that we just re heated.

Artisan bread can be repurposed and it usually becomes bread pudding. Or in Mexican and Mexican themed grocery stores and bakeries its turned into a type of pan dulce called a piedra (rock).
