Very little is wasted and if something sits out for a few days you slap a 50% off sticker on it and it's gone within minutes. Some people even walk up to the counter and ask if you can put the sticker on something because the bread was baked 2 days ago.Also, and this might be a Canada thing, but we would bake like 20 baguettes at around 6PM and put them out steaming in their bag and there would be a line of people waiting for the "fresh stuff" to take home for dinner. Not realizing it was frozen pre cooked baguettes that we just re heated.
