This is easier than the pasta variations that you have to cook in butter, pilaf style, before adding everything else.
One of the first things that I read in a cookbook was a guy saying when you cook a steak in a pan, the more different fats you use the better it tastes. So I've got olive oil and butter here. I recently tracked down the book and ordered myself another copy. I haven't seen it for over twenty years.

A really fantastic plate of food here. The onions and the crispy salty chorizo and the cheese, the cool salsa, just enough runny yolk. I recommend making this if you've never tried it before. You can do it scrambled like most people; I usually do. But this is good too.

This is the end steak; the ugliest of the bunch. Had some gristly parts so I butterflied it and cooked it well done. I like a well done steak sometimes. No point in endlessly chewing on some medium-rare chunk that's not fit to cook medium-rare. Buying whole subprimals at $5/lb is worth it. These are great problems to have.

Made these prawns in an air-fryer while my range is soaking in degreaser. Didn't turn out too bad. I use my food processor more than that air fryer. Just not my kind of cooking.

There's that stupid thread about how it's cheaper to eat at restaurants. HAHA!I have a freezer full of steaks I got for $5/lb. Each 12 oz. steak is costing me about four bucks. There's no beating that. You can add up the cost of the freezer and all that semantic shit, but it doesn't make it cheaper or easier to eat at a steakhouse.
I'm actually looking forward to some chicken or pork dishes next week. I need to freeze smaller bags of steaks.
You can't go wrong with butter and garlic. I'll see how that crispy onion oil stuff is by dumping some in the pan.

I got a sirloin tip and two tri-tips for $5/lb, a NY for $8/lb and a Rib-eye for $9/lb. I had them just cut them all into 1" - 1.5" steaks for me. It was almost $400 but I got a ridiculous amount of beef. It would have cost well over a thousand had I bought it piecemeal at my local store.I'm going to get a chest freezer and start buying sides of beef to get even better deals and more cuts of meat. The way prices are going up it's the only way to make eating a lot of beef economical, and that's important to me.
