When I enhance a mac n cheese casserole, I like to add minced fresh onion to my butter when making my bechamel, then I add chunks of butternut squash to the boiling water, near the last minute of cooking. There is something nice from the softer squash. I might fold in some ham when assembling, but it's always topped with buttered fresh breadcrumbs before going into the oven. That browned topping and overly done pasta corners and sides is the texture I want.I don't have leftover ham, usually. It's gobbled up. But, I do buy the BOGO Smithfield "ham steaks" for dicing into recipes.
