I typically do these for Thanksgiving too. I stuff mine with quartered lemon and onion, and under the skin I put butter, sliced lemon and garlic. They're super easy, definitely give it a try!

My mom made us these a few times growing up. Ive never really had the desire to get one because it seems like a lot of work cutting around all the bones. Much easier to just get chicken thighs or breasts.
