Hell yeah, Chinese ribs at the hot bar today! Not sure what makes these different from normal ribs, never ordered them at a Chinese place, but I’m curious.

chinese ribs are simmered/pre-boiled in sherry laced chicken stock w/anise, ginger, or 5 spice powder, then glazed in heavy red food coloring char siu sauce, a blend of hoisin, sesame oil, dark soy and dark brown sugars, etc, and may even have ketchup. A lot of pork in chinese cuisine is twice-cooked like that, and you should indeed taste the 5 spice in the flesh itself. If it's just sugary, it's meh. Good pork belly should have the amazing flavor from the first step too.

Oh, it's the sauce. They cook em in a char siu sauce which contains that red soybean paste everyone goes on and on about, combined with soy sauce and honey and other junk, usually 5 spice.

i was working in a chinese buffet some 8-9 years ago, the ribs were DA BOMB. very tender, very tasty and that sauce is caramelisation of some sort, i think the original chink cook used sugar and starch to make it. get them, you won't regret it

what a total waste of time. fry sugar, add cooking wine, 2 sóys, spices, ginger, spring onions, water & reduce down to a syrup. what you listed is goyslop
