Whats the best recipe for quick pickled red onions? Do you add sugar to your brine? whats the vinegar proportion to water? thinly sliced onions or thicker cuts? do you add any spices besides salt?

I do 50/50 water and vinegar and maybe a teaspoon of sugar.

Bust out the violin. Just add spices to taste.

4:2:1 is supposedly the go-to ratio but surely other combinations are equally interesting.

I use them for plating purpose, thicker slices are more elegant and add some height whereas thin slices almost look shriveled.

>1tbsp whole peppercorn
>2 big red onions

Usually, it gets me between 4 to 6 jars depending on how tight I pack the onions. Everyone loves them, and I always keep a few jars on hand for get-together and gifts. I follow a similar recipe for green beans, but I add red pepper flakes and a clove of garlic.

half vinegar half water
thinly sliced but thick slices are fine too
I add allspice, thyme, cumin and coriander
More sugar than salt
