What is the best way to make hot chocolate while still using a mix
We have so many laying around and I want some
Is using a pot better

The best thing to do with hot chocolate mix is add when you're making whipped cream. The additives make it get insanely thick instantly and you can freeze it and make fire icecream too.

If using a mix, just know some mixes have powdered milk, and some are kind of chintzy on that aspect. It tastes best with milk. Use hot whole milk, or 1/2 milk. Nuke them to be fast, just know to use a larger pyrex measuring cup to avoid boilover of milk. Steaming milk and making froth is fun, but you can also put in a splash of half n half or whipped cream.

To me, the bars of Corona and Luker morena are the best. Snap off a bar or 2, and it'll melt nicely into your hot milk. The spanish brands use dark brown sugar and it just tastes richer to have actual chocolate, some even have a hint of nuts. There are a few "drinking chocolate" mixes that have actual chocolate/cocoa butter content too in the powders, like mini chips,, one brand I have repurchased is Guittard. I am sure I've bought the Ghiradelli "mocha" flavor hot chocolate a couple times too. It's pretty delicious.

I'm confused. Using a pot better than what? What else are you making hot chocolate in?

Also yes some people use a microwave or Keurig

Only thing I'm aware of with a microwave is that they can denature proteins due to the pencil sized beams jiggling the water molecules fast enough to overheat them. You can see this when you microwave coffee with cream for too long in a microwave since it will often cause to top to skin when it cools.
Doing it in a pot on the stove lends itself more readily to multiple servings, but a smol, say 1/2 Qt. pot, would be fine for a single serving.
biggest advantage of the pot is really that you can froth it up nicely with a whisk or hand mixer with a whisk attachment.
candy cane garnish is nice too, as the hook really comes in handy.
