I live less than 100 kilometers from Valtellina and I eat bresaola all the time. I also tried bündnerfleisch a couple times.
from what I remember, bündnerfleisch is denser and has a more intense/spicier taste, and is more similar to slinzega, another cold cut from Valtellina that I alredy mentioned along with bresaola in my previous post.

Pretty great but it's no filet d'Anvers which costs 1/4 the Italian price. As a result bresaola etc are 50% cheaper in Belgium than they are in Italy and Switzerland.
