It wasn't too complicated, chicken and vegetable soup where I browned the chicken and sauteed some of the vegetables in the fond afterwards, then boiled everything together, and added chicken buillon cubes, herb salt, pepper etc. tons of different vegetables, and I added some lemon juice at the end. The day I made it it was okay, but I had added too little salt and no lemon juice. After a day in the fridge where I heated up a portion with extra salt and lemon juice I swear, the broth from this fucking soup almost made my eyes go back into my skull, it was that delicious. I never knew soup could taste that good, the combination of the acidity, the spicyness, and the salted chicken/vegetable broth was amazing

I made a soup kinda like that just the other day. I also put thin sliced radishes, zucchini spirals, and some roast tomatoes in it, then arugala and parsley at the end. I also poached and shredded the chicken breast first. I usually do it like you said, browning the chicken and deglazing the fond with veggies after, but I was trying something new. good job, chicken soup is underrated. my struggle meal when i was unemployed was chicken legs, frozen mirepoix, stock cube and some seasoning. fry the skin and use that fat to do the veg and the leag bones add extra flavour. i'd eat the meat over 2-3 days and the soup for the rest of the week

I just eyeballed everything honestly. Didn't follow any recipe, just like 5 cloves of garlic, one onion, one bell pepper, one chili pepper, 4 potatoes, half a broccoli, half a green onion, and then just poured in about 1/3rd of a frozen bag of various root vegetables, including carrots and celery root.
