As with all food, it depends entirely on who is making it. If you got shitty pizza from a low quality pizza place, would you declare that all pizza is shit?

As with all foods you've never tried before, try it from a few different places before you write off an entire continent's food culture. I know the current fad is to shit on everything related to India but Indian food can be very good if it's made well. There's really no culture that has overall "bad" food. Some bad dishes maybe but every culture has some great stuff that you should be able to appreciate if you're not a fag.

Some of them use the same gravy base for everything and it all tastes a bit 'samey'.

Ordering Indian food is kind of a roulette gamble. Sometimes it's can be very gourmet, or else it's a scary dirty kitchen or just same-y as another anon said. I try to figure out what region they are from, or you can just ask. Determine pakis or hindu indians by little clues on the menu.
Next you should know wtf to order to have varlety on your plate. You want 1-2 breads, some kind of stuffed crispy thing for appetizers, lots of fresh condiments and pickles, and 2-3 mains, like a lamb, a chicken and a dal choice. I'd go for something tomatoey and something creamy or coconutty, something charbroiled or tandoor cooked, and a cool raita. Save room for a frozen mango, lychee or pistachio kind of dessert or pudding.

I am the Bong from the last few posts and I kind of agree with you.
When you sit down and order your beers, we often ask for the pickle dish as kind of an aperitif - which is generally popadoms with chutneys (Lime Pickle, onion chutney, raita, mango chutney)
Starters are usually chicken tikka, samosas, onion bhaji, etc.
Main meal can be wild - some sort of tikka masala dish, Rogan Josh, Madras/vindaloo, maybe a Passanda if you like mild curries but always get a few sides . . .I recommend Cauliflower bhaji, saag aloo (spinach and potato), Tarka Dall.
I don't normally bother with deserts as I find them a bit disappointing and that goes for any deserts from east Asia.

This is what people need to remember about US ethnic restaurants. They can't afford to blow their health inspections. They know extra eyes are on them anyway. You don't have to worry. My local one the wife is Indian and the husband and most of the staff are white or other. It's not like in the Chinese places where everyone is Chinese. here’s a tip: go to an actual place, and get something that isn’t the canonical curry for fat white people. dosa is usually pretty consistently good. biryani is hit or miss, but can be divine. this board shilled pav bhaji at one point, it’s garbage don’t get it. if you can get a lunch thali, that’s a good way to try a variety of different things.
