why has ck been sleeping on the trick of replacing stupid bottled water with discarded whey when making sourdough?
>better taste
>more moist
>doesn't get stale even after 4 days
>much easier to handle instead of adding flour during shaping like all those youtube sourdough dorks
>>
Because most people don't have discarded whey just laying about.
I've got roughly two gallons in the house right now from the missus making paneer a few days ago and I've been trying to use it up. She won't touch the stuff cuz she's lactose intolerant and I'm running out of shit to shove it into besides soups, soups and also soups as well as smoothies.

But most people except boomers and Americans without public utilities, don't have bottled water in their homes either

I wanted to make mozzarella, it failed so I made ricotta so around 1.5 liters of whey were left, didn't have much bottled water left so I made pizza dough and bread with the whey
