Evening coffiggers. I don't drink the stuff much myself but I wanted to get my SiL a good present this year and my brother told me it was a long shot but there was something she wanted he was unable to find. Appearently caribou coffee made some kind of spicy coffee and it is nearly impossible to find the stuff. Spicy mocha or something? Anyone know where you can find the stuff or a very good alternative that matches it closely? Appreciate any help.

I didn't even bother taking the bambino out of the box yesterday. I'm sore from being old and going back to work and I just had her drink the filter coffee. Kind of a fake nespresso machine, L'Or barista machine. I am using the final shipment of big pods that seem to be discontinued, so have to switch to all espresso servings all the time, or just replace the machine. I have every other option, from drip to french press, to electric moka pot, to old fashioned 12 cup percolator. I really like the pressure of the machine best.

Today, I have a tsp of Starbucks Chestnut Praline Latte creamer added. Splash of half and half too. It's just the right sweetness.

In most circumstances, yes. Coffee is very effective at counteracting the myriad of metabolic insults the modern environment exposés us to. I'd wager that coffee consumption is largely a form of self medication.

Coffee and caffeine's pro metabolic nature can actually lower cortisol in some people. This would happen to my sister back when she was on hormonal birth control. She would slam a monster and conk out.

What is the most impactful change you've made to your coffee this past year? Gear, technique, recipe whatever. Anything you feel has really elevated your cup. For me its getting a perfect baseline water chem and directly dosing buffer per brew/per cup. Empirical water just makes it so fucking easy to dial in.

Currently sipping some Finca Monteblanco CF pink bourbon with Empirical Glacial.

Honestly the only change I've made in the last 10+ years is start using filters in my portafilter a couple years ago and upgrading my roaster 3 or 4 years ago.
Everything else is still the same. Same kettle, same espresso machine, same grinders, same brewers. I'm still perfectly happy with all my old gear. I do need to get some new burrs for my espresso grinder soon though.

I had 22g left of the Lerida Loma so I'm brewing 11g in my sworks with no bypass sibarist fasts today. Wet wdt during the 20sec immersion bloom then melodripped to 1:20. Like 2:30 tbt.
Super clean washed panny gesha + Empirical glacial(with added silica for extra mouthfeel and linger) is almost cheating. Lab Sweets don't hurt, but the silkiness that the silica adds takes what would be a thin brew and makes it like drinking nectar.

with my HG-1 P espresso is between 9-11(from zero)(though decaf is an outlier and is from like 8.2), moka is 1 full rotation + 4-5, pour over is 1 full rotation + 5-8
(for reference there is 14 numbers on the dial and 4 spaces between each number. each step is 13 microns(the fact they didnt make it 14 is pretty annoying)
(so i guess if you didnt want to say "1 full rotation +" you could read moka and pour over as "18-19" and "19-22")
(i think this makes sense, but if it doesnt, sorry.)

You add in the buffer separately so ive been mixing my water up without it and directly dropping it into my carafe and cup. I use the light roast acidity++ recipe as a baseline and then tone down as necessary with the drops. When I want to really push a brew I drop some magnesium "extraction booster" directly into my dripper while brewing. Forgot to use it on the last cup :/ I used to shit on the guy back when he was marketing as Truth Serum but if youve got great coffee and a great grinder I really think its worth the cost to try. If you're brewing with a $100 k6 I'd probably skip it for now and just mix your own. He's put some easy to make dry salt recipes out if you google around.

well first off we have to define what you think this is
could you post an image of a device that creates this "pour over"

french press is usually over extracted and gritty
cowboy coffee is usually over extracted gritty and burnt

french press is metal filtered
cowboy coffee isnt filtered, its usually rested a little for the grounds to sink to the bottom and for the "clear" coffee to be poured slowly off the top in the a cup.
OR through a cloth filter

Pour over is faster, and you save marginal beans with finer grind. V60 for single serving, Chemex for larger amounts. Ballpark 3'' and a 30-40s bloom time.

French Press takes 3x as long percolating with slightly less fine grind, but will be more consistent and can do larger amounts all at once if desired. Skim silt and stir after 5'', pour on 9''.

Cowboy/Swedish/Church coffee uses coarse-ish grind and can easily accommodate very large brews in primitive circumstances. Without using egg white on the grounds + shell to attenuate acidity, it can go ashy/over extracted if careless. Butter and "Bulletproof Cofffee" (MCT oil or Coconut) are variants. You can apply spent hardboiled eggshells on any grounds for the same acid attenuation effect. Turkish/Greek coffee's the small batch 'espresso' version of this with fine grind.
