Nowadays, you can use vermouth (like Julia Child did), some other fortified spirit like sherry, cognac, port or marsala, or a vacu-vin type wine stopper with whatever else your're drinking that week. I sometimes buy the small 4 packs of wine for my regular recipes. I like freskshow red blend for the picadillo night, and making beef stew in the crock pot. Vodka is common too if a rosa sauce.
