Look...cooking wine is an old-timey thing that was fortified to make it not go rancid and off flavored between occasional uses. It might even had added salt and other flavors, even. Nowadays, you can use vermouth (like Julia Child did), some other fortified spirit like sherry, cognac, port or marsala, or a vacu-vin type wine stopper with whatever else your're drinking that week. I sometimes buy the small 4 packs of wine for my regular recipes. I like freskshow red blend for the picadillo night, and making beef stew in the crock pot. Vodka is common too if a rosa sauce.
