The Amish want to keep themselves intact and apart from the modern world. They survived for centuries without electricity, why would they need it now? And having to pay for electricity, and the appliances that use it, would require money, meaning they'd need to sell produce and interact with the outside world. It's a complication they don't need so they avoid it.

afaik the main thing is self-reliance. A lot of them have generators or solar now but you'll almost never see them hooked to the grid, and there's also a whole bizarre ecosystem of tools that are normally electric being converted to gas engines for them. They also separate work and home and are more open to modern stuff for work.

Amish are allowed to use electricity for work related reasons as long as its not within the household. They can have a telephone but it needs to be out in a workshop not inside the house.
