something cool but not too fancy or expensive is taking a cleaned chicken and sitting it upright with a can of beer open inside it and popping the lid on
get's a flavour into the bird and the can conducts heat, combined with the steam of the beer it cooks it through nicely but with that char flavour on the outside

Make a nice big greek or isreali salad, and grill various meats, and pita bread. Can do chicken, steak, pork, lamb kebobs or "gyro" meat, various slabs of great veggies. I do peppers, onions, eggplant, zucchini, mushrooms. Can do an interesting pilaf or greek potatoes for another side. Crowds also like a nice dessert option.
