I'm having a girl over for dinner and zero idea what to cook. Need ideas for something impressive but not too expensive, and not heavy.

I like to cover mine in time foil when baking, but slices of butter on thr filet, and put salt, pepper, and fresh chopped dill(Absolutely amazing and can be bought fresh at Walmart for like a dollar) bake however long Google says and pull it out. Slice up a couple lemons and squeeze over the salmon with extras to eat with. Boom done. One of my favorite meals.For the asperagus, make sure you snap it before baking, they break in the middle but it will find the stress point. I've not snapped it and they're chewy as fuck ans gross. After that, rinse it off ans in a bowl toss it in olive oil, in that same bowl season it with garlic powder, salt, and pepper, toss it in the oven and bake for like 10 minutes or until tender/crispy. I put them on a pan with foil to avoid mess and pan sticking. You dont wanna over cook it because it'll burn the shit out of it. If done right its amazing and not too difficult. If you want one more side which honestly for a date isnt needed imo but hey you never know, you can make some roasted red potatoes. I haven't really perfected these yet, but I like how I make them.Wash the potatoes off, then cut each into 4 pieces, then toss in a bowl with olive oil and season it with salt, pepper, ans garlic powder, same drill as before you may even be able to reuse the oil. But put it inna baking sheet with foil, and bake for 45 minutes, you may want to flip half way through to avoid one side getting burnt. If making covered their not crispy but its okay still but may need butter. Once their done, I like to serve with sour cream but its your life bro. All and all the meal isnt too expensive even if you need tk buy every single ingredient and as long as you dont fuck it up she should think you can cook.

I always suggest charcuterie but if she’s like.. expecting to eat and you don’t know of she’s DTF, an entree to go with an appetizer of light foods is safe. Pasta is a very safe dish, if you can shrimp scampi, aglio oli, cacio pepe, carbonara, Alfredo, vodka sauce, they’re all safe dishes unless she has allergies.Making something like a citrus salmon with a side of roast veggies and pasta or salad is good too.

Shrimp with pasta. It's easy and light and girls usually like it a lot. That's my go to for this occasion. Butter, olive oil, white wine, little bit of garlic (not much), some parsley...voila. Just make sure to get good quality shrimp.

I once made chicken-fried pork chops for an ex-gf and her sister and they LOVED it. This of course assuming you know how to bread and fry well, you better have practice frying/breading before you try it for a date night.
