There's a million recipes that are all basically the same technique wise but I recommend using yukon gold potatoes and gruyere as the cheese.Veg is easy. If you want to do something simple just make a Caesar salad or roast some asparagus in the oven. If you want to something more technique forward do blanched green beans sauteed in butter and olive oil.If she's coming over she already likes you so don't overthink it.
