I was looking up how to prepare raviolis for a party (was requested to) and found this old lady's food posts. She really likes cheese
If anyone knows how to prepare raviolis for a party let me know. I want them saucy but not mushy. I was thinking I make a big batch of them, freeze them, then the day of christmas pre-boil them el-dente and layer them in a big metal sheet pan on top of heated sauce. I go warm sauce, raviolis, pour it over them, then another layer, pour it over, then top with a sprinkle of mozzarella cheese and brown in oven or is that too much. I seen people bringing them in a single layer but I don't want them to get cold and the party host will have warmers for the deep style sheet pans

Clarify.
Was your job only to LOOK UP how to prepare ravioli?
or
Was your job to actually prepare ravioli for a party?

PS. ravioli is already plural, you don't need to add the 's'.

you need to quick freeze them
>lightly coat with semola
>put on a tray, separated!
>into the coldest part of your freezer, ideally directly above ice packs so the cold transfers quicker
>after like 1-2h you can put them in a bag to store more space efficient
if you let them slowly freeze they'll get mushy
