I have been gifted two logs of fresh goat cheese. I'm going to be honest, I tried it, and the taste is very strong. I'm not a big fan of it by itself. I am also on a very tight budget, and I'm going to be moving soon, so I really need to use up everything in the fridge and make the most if it. Because the person who gifted the cheese is very close to me, I can't just re-gift it to someone else. I need to figure out how to use all this cheese in ways that I will actually enjoy and ideally use it to make main courses. Again, I'm trying to spend as little money as possible in the next few weeks

(I'm not sure how well that would go realistically because of the sourness of the cheese and the extra strong flavor. Meat is also a little bit expensive right now, especially beef, so I'm looking to go for the cheapest cuts of meat. In my area that's pork, then chicken, and then ground beef, pretty much anything else is too expensive and off the table.)

This anon has the right idea. Cheese and sweets go excellent together, but if you're truly poorfag you can just put some kind of syrup on the cheese and snack on that to make it paletteable. Honey, agave, even maple syrup are good examples, but corn syrup (sorry for summoning schizos) will be your best bang for your buck.

Forgot to add certain kinds of fruit or jelly will also do the trick. Even applesauce can compliment goat cheese excellently.

On bread or crackers with fruit jam like the other poster suggested.

I used it as a topping for nachos which was surprisingly good. You could also make a cheese sauce with it for pasta. Maybe use it in salad instead of feta.

Well, I just did a grocery one and I wasn't particularly thinking about it, so I didn't grab anything directly related to what I can do with it. I don't usually purchase jam. I do have honey in the pantry, but I'd prefer to just make something that can use up a bulk of it that I can eat over time. Would it be fine to just use an acheish and use like I would use brie or another soft cheese or with a tang over power everything? Could I use it for pasta like I would in other cheese? Or again, would the tang just end up overpowering everything else and make an overly sour or at worst bitter dish that would be completely inedible?

From everything else I deciphered from your post, you're unfortunately gonna have to consume it in small amounts, as goat cheese has a very strong, distinctive flavor that will absolutely overpower anything you put too much of it it. The only thing i can think of would be to hide it with other cheeses in something Italian (pizza, baked ziti, lasagna etc.) or mac & cheese.
I do find it curious that you enjoy brie but not goat cheese, but as far as pairings go just treat it like brie and that should take a lot of the bite out. Hope you weren't saving that honey for anything in particular.
