Myth: Italian cuisine is cheese-heavy
Reality: This was the influence of the dairy-heavy US and UK.

Cheese is supposed to be an accent, and only for certain dishes. It is not something that you just pile in until it overtakes the whole dish. And you NEVER pair it with garlic.

I dislike cheese-heavy dishes. It's like the savory boy/gal's version of loading everything up with syrup/icing/sprinkles, etc.
I guess bacon too, but it's a little bit different since people don't normally just load bacon on top of foods like they do with cheese.

Correct, that is a thoroughly American invention. In Italy, when they do garlic bread, for example, it's toasted bread with olive oil and a bit of garlic. No cheese to be seen.

Indians came to the Uk and tried to sell their regional variation of their curry and found it didnt give enough variety and so they created BIR sloppa. If you go to a proper pakistani chop house in the UK there is less variety but the food is night and day different to a BIR place. BIR places also suffer by being run by bangladeshis that wont cook pork so invent some overly hot version of vindaloo and not stewing a shoulder of pork for hours after marinating it in garlic and vinegar.
The problem is indians trying to cook the type of dishes from other parts of india from them, but trying to do it like they cook stuff.
