Even with your hood fan on high (if you have one), those micro droplets stick to fucking everything. I first noticed on my glasses. Then I got something off a high shelf and noticed it was lightly coated. Had to wipe down everything. Now I know why you see (more in the east where people fry at home more) those glass kitchen enclosures either as a build you can do or just coming with a newer home. I know a dude who fries a lot at home and his whole stove area has got a THICK layer of dark grease. But he just kind of lives gross anyway. I'll do up a batch of fried chicken or doughnuts once a year, but from now on I'm going to set things up on the front porch. I went back to doing bacon in the oven for this same reason. Grease accumulates and can become hazardous on the floor.
