What is THE best beef stew recipe in your opinion?
Lately I've been partial to the Belgian Carbonnade Flamande, an onion and beer stewed beef often served with fries. Irish stews with Guinnes has always been close to my heart...what else do you have in store /ck/?

if you are adhering to some specific list on ingredients you are doing it wrong
a stew is the ultimate gut feeling based cooking and can never truely go wrong so long as your instincts are decent
attempting to over complicate it into some gourmet dish is a perversion of what stew is and you should be ashamed for it

I disagree. The choice of vegetable can elevate or detract from the taste of the meat. The choice of braising liquid weights heavily on the ultimate flavor and consistency. The impact of spices on the final dish goes without saying. Even a rustic, milimalist type of stew has to rely on correct proportions and balance between quality ingredients.

Start off chopping onion celery and carrot, or grating them, and fry it off and reserve. I normally mix some braising steak, shin and cheek, salt and pepper it and brown it off. Add some beef stock, bay leaves, thyme, add the veg back in and cook down for several hours. I may or may not add some larger pieces of carrot, some shallots or baby onions I have fried and some lumps of potatoes. Goes with how I am feeling at the time. It can have nothing extra added and works, it can have other things added and works, its that simple. Can be served with mash, fondant potatoes, chips or fries, dumplings. The choice is yours.

Goulash.
* 1:1 fatty and sinewy beef:onion (this is an excellent place to reuse trimmed parts)
* 1 teaspoon tomato paste per kg of beef
* 2 teaspoons cumin per kg of beef
* 1 teaspoon of smoked paprika per kg of beef

Use clarified butter to brown & render the beef. Take out the beef and reduce heat. Brown tomato paste. Add onion. Add cumin. Stir fry. You need the onion juices so don't have the heat too high. We're softening them not frying them. After 3 minutes add meat. Add enough water to just about cover. Add remaining spices. Simmer for 5-6 hours. Adjust salt
