Why do non-western desserts suck? They're typically simple and not satisfying. The ones inspired by the west are obviously an exception, but almost all homegrown desserts outside of the west are a waste of time. What gives?

Honey is notoriously difficult to use as a sweetener due to its high moistute content, refined sugar and flour are key for just about all baked sweets, which make up a majority of European desserts. Chocolate was similarly only really accessible to Europeans due to their access to America. And access to milk too is limited in other countries (with much of the world being lactose intolerant). Not much left you can make without these components.
