I have made stock only a single time in my entire life but recently I've started to want to elevate my cooking and this video has me inspired
Can I freeze the stock afterwards?
When do I want to use this kind of stock vs non-roasted chicken stock?

Yes you can freeze stock. You would lose some flavor/aroma if you reduced it to save space in freezer but whatever.
I have used pressure cooker to make stocks before and they're good. His recipe is definitely worth a try.

Not watching this but if you properly make stock and have it clear you can keep it a week easy in the fridge, but I've kept it for several weeks. Salted probably keeps very long outside the fridge too but I usually freeze leftovers in ice cubes.

yeah i just don't bother doing it any other way now unless i'm making an absolutely fucking enormous batch and need my massive stock pot but that's two different use cases
the instapot/pressure cooker for smaller batches of really, really good stock
the stockpot for bulk batches of mediocre workhorse stock when warranted
as for this vs non-roasted stock, that's really dictated by you and your adherence to tradition. many dishes call for a light clarified consomme when needing to maintain delicate flavor, but that's up to you as the situation demands. you're the sultan of your stock

Also how could you adapt this pressure cooker method to other stocks or even chicken without buying a rotisserie chicken?
Could you buy chicken frames and chicken wings, roast them, cut them up with a bone cleaver and do the same thing?
