Peruvian shines with seafood and Asian -adjacent dishes, like chaufa (fried rice) or jalea mixta (plate of fried seafood), or whatever their lo mein dishes are called (tallarines?).

so basically peruvian food is aji amarillo, tomato, onion, and an acid on top of a normal cooked protein
and chaufa is literally regular fried rice with a little cumin and a bell pepper
now this is much more interesting
