The main complaint was the intense ginger / garlic smell. I also finished with a sauce with oyster and soy sauce. To me it was an amazing smell and very tasty dish. Maybe I did too much heat and oil smoke was the main issue. I don't know.

yeah, that's what I did. Chicken first, then browned some broccoli and carrot, then briefly minced ginger and garlic, then the sauce, waited until it thickened, and then dumped veggies and meat back in.

That's a good step for reducing the smell. I would also use fish sauce more like a condiment than a seasoning since that's very easy to smell and 10x less offensive to people who can't stand it if it's cold from the fridge. Is it better this way? No. But it's a minor step down for less trouble.

I will probably try using a regular non stick pan. It still should taste fine but maybe the smell will be less intense and there will be less oil smoke.

This is a thing about Chinese food generally. You need massive heat and lots of oil, and it makes a big mess and smell.

I've rented places from Chinese people and they've asked me not to cook Chinese food for this reason. Chinese people who move west often replace the stove in their new properties because they think the flame is too small. Chinese cooking is better suited to a garden, desu.

That said I love me some stir fried stuff. My kitchen is coated in a fine layer of oil though
