I would also use fish sauce more like a condiment than a seasoning since that's very easy to smell and 10x less offensive to people who can't stand it if it's cold from the fridge. Is it better this way? No. But it's a minor step down for less trouble.

This is a thing about Chinese food generally. You need massive heat and lots of oil, and it makes a big mess and smell.I've rented places from Chinese people and they've asked me not to cook Chinese food for this reason. Chinese people who move west often replace the stove in their new properties because they think the flame is too small. Chinese cooking is better suited to a garden, desu. That said I love me some stir fried stuff. My kitchen is coated in a fine layer of oil though
