An Army tank mechanic once gave me a restaurant recommendation since I wasn't from the area. It was pretty good. If you're ever in north Georgia, not only can you rent a tank from him to crush a car, he'll also let you know about the best local dining options (not that there's a ton of them).

Most of these are smaller places that aren't prepared to handle the massive influx of customers after they get their Michelin star.

So they get bombarded with people have to cut quality and do a lot more pre-making and reheating than they used to do. Quality drops and they frequently sell the place while they have a strong reputation to do so. Then the subsequent owners slash quality for bigger profit margins.

Most of these chefs are more artists, than business manager and cannot really scale up production as needed for all the added traffic a Michelin star brings.

This is such a double-digit IQ take. Guinness, a beer company, is the arbiter of world records. Red Bull, an energy drink company, sponsors silly competitions like making boxcars and gliders. The Michelin restaurant side is essentially independent and just so happens to be part of a tire company.
