>>21797924I basically stopped making homemade pizzas for 5 years. My health is terrible and so motivation to cook is low. I made a small pizza 2 nights in a row and the crust actually came out good. Better on the 2nd try because i let the dough rise more and got it thinner in the pan.Used to make them a lot like 2016-2019.Used king arthur flour. Regular flour or bread flour always gave me some problems. I also had a mason jar of dead yeast at one point im pretty sure and it was never rising, but when i got new yeast my recipee was fine again.And this time instead of olive oil i added some peanut oil to make the dough not stick as much to the sides. I got pretty good at eyeballing how much water to add to not overhydrate the dough.I sometimes used to make pizzas in a sloppy way where the shape didnt matter, like yours, but now i have a smaller square pan and it fits perfectly. The crust colors you have look good.I used to be lazy sometimes and add raw hamburger as a topping but it'd have gross grease on top. So the other night i actually fried some up to brown it first and added that. It was much better.
