Yes it does. The salt can fully penetrate the meat, so you get seasoning all the way through. You will also get a better crust. You shouldn't really brine beef in the traditional salt+water sense like you might with something like chicken or turkey. You can dry brine poultry as well though. I think it's easier.

Not me. I eat properly dry-aged beef from a quality butcher who picks his own carcasses. Doesn’t need brining or fucking about with.
