in Poland:

fried carp is the most iconic one. back when fresh fish wasn't as available, people would aquire live carp, keep it in their bathtubs and kill it right before Christmas. this is the origin of the "bathtub fish" photo

Most Central Europeans eat Carp or similar on Christmas eve, some with just potato salad, others more fancy with crab cocktails and other appetizers, maybe even a lobster.
On Christmas day and Christmas day two, you get the heavies like beef roast and big birds, usually with the greater family while on Christmas eve it's only the core family maybe grandparents.

In Texas:
- Some kind smoked meat common, usually brisket or Turkey
- Tamales are a classic. These are meat and sauce covered in masa dough, steamed in a corn husk. Dead ringer that your family has been in Texas for a while if you do this and aren't central American
- My family always had guacamole every year, but I don't know how common that is. My wife I don't do this as adults.
- Standard American Christmas fare like roast meats, green beans, mashed potatoes, dinner rolls, etc all common as well. But I feel like these are getting less common since the Texan dishes are much better anyway?
This year my wife and I did smoked tenderloin, mashed potatoes, roast carrots, and some duck tamales using a bird I shot a couple weeks ago.
